Italian Cream Cake Recipe

If you like cake that is full of goodies, you should try Italian cream cake. This kind of cake is sometimes recognized as “Italian wedding cake”.

Ingredients
- Cake – Pecan Cream Cheese Frosting
1/2 cup of butter 1 cup of chopped pecans
1/2 cup of shortening 1 package of cream cheese (8 oz)
2 cups of sugar 1/2 cup of butter
5 eggs (separated) 1 tablespoon of vanilla extract
1 tablespoon of vanilla extract 16 ounces of powdered sugar
2 cups of all-purpose flour
1 teaspoon of baking soda
1 cup of buttermilk
1 cup of sweetened flaked coconut

Directions for baking cakes
1. Preheat the oven to 350 ๐F.
2. Grease three cake pans and put some flour on it.
3. Beat the butter and shortening in a large mixing bowl on a medium speed until it is light and fluffy.
4. Add some sugar slowly.
5. Add the yolks JUST ONE at a time. You have to blend each one completely before adding the next.
6. Stir in vanilla extract.
7. Mix the all-purpose flour and baking soda in another bowl. And then, add these dry ingredients to mix with the butter mixture on the low speed. Add some flaked coconut and mix well.
8. In another bowl, beat the egg whites until stiff peaks form. Now, blend it with the cake batter.
9. Pour batter into the cake pans and bake for 25 minutes. Then, leave them cool completely.

Directions for the frosting
1. Roast the pecans in a pan at 350 ๐F for 5 to 10 minutes.
2. Beat vanilla extract, butter, and cream cheese together on medium speed till it’s rich and creamy.
3. Gradually add sugar on low speed.
4. Adjust to the high speed to smooth out the frosting. Lastly, stir in the roasted pecans.

Put the first cake layer on a platter and apply a layer of frosting over it. Put the second layer of cake and apply frosting. When it comes to the last layer, apply the remaining frosting to the top and sides of the cake. You may decorate the cake with extra pecans if you’d like to.

Tip : The cake usually tastes so good when it remains moist, so do not bake too long.
